Overview:
At Dick’s Stinkin’ Good Garlic Farm, we don’t just grow garlic bulbs — we also harvest garlic scapes, the curly green flower stalks that hardneck garlic produces in early summer.
Flavor Profile:
Scapes have a milder, fresher garlic flavor compared to the bulb — a cross between garlic and green onion with a hint of sweetness.
Appearance & Harvest:
Harvested while tender and curling, scapes are bright green, crunchy, and versatile. Removing them also helps the plant put more energy into forming bigger bulbs.
Storage Life:
Fresh scapes keep about 2 weeks in the fridge, or can be frozen, pickled, or turned into pesto for longer enjoyment.
Best Uses:
Chop them into stir-fries, grill them whole, blend into garlic scape pesto, or use fresh as a garnish.
